Underdawg's is the passion project of a line cook right out of highschool. Oliver Springsteen has been working in kitchens for seven years, getting his start in the food truck at Right Brain Brewery at 12 years old.
After working on the Betty's Hot Dish Truck, and cooking at Lil Bo since their reopening in July 2021, Oliver bought the truck from Jenni Scott and turned it into his own little thing.
